The wine is beautiful, clean and quite perfect. There is a fruity aromatic nose with stone fruit characters. On the palate is intensely ripe following the nose characters, with a great acidity presence that balances the wine. The finish is dry, saline and refreshing.
This wine is 100% Sauvignon Blanc from the Cycle Road Vineyard in Waipara, North Canterbury in New Zealand. Organically farmed with no pesticides, herbicides or systemic fungicides used. Vines are planted on silty clay soils with overlaying calcareous sandy gravels.
The fruit was hand picked on the 13th of April 2019. Then whole bunch pressed after overnight skin contact. Natural yeast fermentation mainly in oak barrels and some in stainless steel tanks where is aged for 10 months. No commercial enzymes, bacteria or additives used except for 12mg/L of sulphites before bottling on the 20th of March of 2020 without finning or filtration. Was produced an amount of 2592 bottles.
