On the nose shows lemon curd, mandarin and biscuity notes while the palate is creamy and elegant with notes of freshly baked dough. There is a clean acidity finely balanced with a mineral style and a long finish.
Taking a modern approach on tradition, making authentic wine is very important to them, as well as making the best wines possible. They try and pick grapes on ‘fruit’ days in accordance with the biodynamic calendar and find this works with the rhythm of nature and makes better wine. They allow natural yeasts the ability to do their thing wherever possible and use sulfur sparingly and bottling with minimal fining and filtration.
Clone 15 Chardonnay from the Corners Vineyard was hand harvested and whole bunch pressed. The free run juice was transferred to 70 % stainless steel and 30 % seasoned oak barrels for fermentation without settling. After a short warm fermentation the wine was left on full lees and underwent indigenous MLF in spring. The wine was then tirage bottled and matured for 2 years prior to disgorging.
