This wine shows a good aromatic intensity with bright floral notes of elderflower and lime blossom. The wine is layered with flavours ranging from guava, melon, gooseberry and lime zest. The palate has definite mineral notes balancing the ripe acidity and myriad of fruit and flower flavours. This uplifting Sauvignon Blanc shows an excellent length and depth on the palate, simply delicious in the glass.

The Sauvignon Blanc 2018 was harvested from the BioGro certified organic Estate Vineyards. The Huia home block has well draining alluvial river-run soils. The sandy silts and stones supply excellent drainage and retain the sun’s heat overnight which contributes to the grapes ripe tropical characters. Harvest commenced at Huia on the 28th March continuing on at Huia before finishing on the 31st March. A sunny, warm but unsettled ripening season provided flavours and structure within the grapes. The majority of grapes were harvested in the cold early hours of the morning to retain fruit intensity and freshness.

The grapes were gently pressed and the juice settled. A thirty percent portion was fermented in neutral French oak to add further richness and complexity to the wine. Most of the wine was fermented using one yeast that is accepted as organic and non-GMO and the only other fermentation yeast used are wild yeasts that are live in the winery. The wines are not fined for clarity before bottling. Vegan and Vegetarian friendly.

Huia Sauvignon Blanc is delicious with: fresh oysters, prawns, scallops; mussels cooked in Sauvignon Blanc; marinated fish with dill; goat, sheep and feta cheeses.

Each biodynamic calendar day coincides with one of the four classical elements of Earth, Fire, Air and Water that have been used since before Plato’s era: Fruit Days: Best days for harvesting grapes, Root Days: Ideal days for pruning, Flower Days: Leave the vineyard alone on these days, Leaf Days: Ideal days for watering plants. It's believed that Biodynamic wine tends to have notably exceptional flavours, appearance and overall quality.

The aim of sustainable wines is for the viticulture and winemaking process to be environmentally conscious and socially responsible - whilst maintaining economic feasibility and high quality wines. This includes building and maintaining healthy soil, managing water wisely, minimising air, water and climate pollution and promoting biodiversity by keeping wild ecosystems intact instead of clearing land etc. When grapes are grown, harvested and made into wine these environmental factors are prioritised to avoid damaging impacts - without sacrificing productivity or profitability.
